California dreaming? Flat Stanley opens in Bali

A restaurant ode to the 1950s West Coast has settled in Seminyak.

Fancy a trip to California? You can now immerse yourself in America's sunny West Coast without stepping foot outside of Bali with the opening of Flat Stanley, an edible ode to vintage California. The Palm Springs-inspired restaurant has made itself at home in Petitenget, with the expansive 120-seater adorned in retro relics and vintage finds galore. The new restaurant was designed by EDG Design, a firm based in Singapore and San Francisco both who helped to create a mid-century modern space that fully embraces the soul of the American state.

The fare at Flat Stanley is just as American as the interiors, with a menu which merges Californian favourites with local Balinese produce and showcases a particular passionate about pizza. Of course it helps that at the helm of Flat Stanley is chef Matt White, a self-proclaimed ‘dough head’, who started Alt. Pizza and Extra Virgin Pizza in Singapore.

Prior to his discovery of the beauty of dough, Matt worked with industry heavyweights Michael Mina and Wolfgang Puck. His latest restaurant Flat Stanley has seen him partner with the Roopchand Brothers (co-founders of Hong Kong favourites The Pontiac and Rummin’ Tings) as well as The Dandy Partnership (founders of Singapore’s Fat Price and Neon Pigeon) to form the new collaboration.

Matt’s creativity has launched a sourdough-pizza menu laden with tasty classics. Guests can tuck into the Peppered Salami; a concoction of crushed tomato, mozzarella, roasted onion, spicy salami and locally-made mozzarella or The Truffle; a bevy of crushed tomato, fontina, and mixed mushrooms, all drizzled with Italian white truffle oil.

It’s not just dough you’ll find at Bali’s latest restaurant of course, but Flat Stanley also offers an array of sharing boards, small plates, vegetables, salads, and grilled meats to accompany its array of sourdough pizzas. Think American flavours like hearty Hanger Steak and Fries, and a Mac & Bleu Cheese that is as decadent as you think it is. And then there’s dessert, which ranges from a Nutella Snickers Bar to an Espresso Panna Cotta.

The beverage options at Flat Stanley are just as lengthy, and include craft beers, world-renowned wines and more than a few cocktails. There’s also Flat Stanley Happy Hour, held daily from 4.00-6.00pm offering 50% off all pizzas.

Flat Stanley is open daily from 12.00pm to 11.00pm.
