Meet the Vision Behind the Bar – Paul Minea
Leading this exciting transformation is Paul Minea, Sundara’s newly appointed Bar Manager. A master mixologist and 2024 IBA World Cocktail Championship Global Finalist, Paul brings a bold new approach to sustainable mixology.
With over 15 years of experience at award-winning bars and luxury hotels, his cocktail philosophy celebrates local ingredients, storytelling, and mindful enjoyment.

Life’s rosier by the ocean at Sundara’s new Pink Brunch. Featuring rosé-inspired dishes, seasonal seafood, and a partnership with Whispering Angel Rosé, this brunch combines flavor and style in a pink-hued celebration.
Perfect for leisurely afternoons, it’s a feast for the eyes and the palate — a blend of luxury dining and beach club energy that captures Bali’s vibrant spirit.
Chef’s Table – Head-to-Tail, Heart-to-Table
Monthly | 6:00 PM – 9:00 PM
Guided by Chef de Cuisine David Gavin, Sundara’s Chef’s Table pays homage to Jimbaran’s fishing village heritage through a journey of eco-conscious fine dining.
Each course highlights whole-fish butchery and hyper-local ingredients, turning every element of the catch into a story of sustainability and elegance.
The experience begins with a Head-to-Tail, Heart-to-Table gathering (6:00 – 6:45 PM) followed by Aperitif & Canapés at TELU, then transitions via buggy to Sundara for the Chef’s Table dinner (7:00 – 9:00 PM).
Sundown Social – Golden Hour, Elevated

As the sun dips below Jimbaran Bay, the Sundown Social invites guests to toast the moment with sunset-perfect cocktails and artisan small plates.
