CANGGU, BALI – OCTOBER 2025 — Regent Bali Canggu proudly announces the launch of the Michelin Master Series, a five-month programme of exclusive culinary collaborations, commencing on 31 October 2025. Hosted at the resort’s Chef’s Table—the resort’s venue dedicated to showcase international-calibre gastronomy experience, the series brings together Michelin-starred guest chefs from Asia and beyond with Regent’s culinary team in an unprecedented celebration of flavour, artistry, and cultural exchange.


Each edition of the series will unfold as an intimate two-night-only experience. With limited seating, every dinner is designed to be immersive, guiding guests through seasonal ingredient journeys and thematic narratives. Moët & Chandon has been confirmed as the presenting partner, with further brand collaborations to be revealed in the months ahead.

The Line-Up of Michelin Luminaries

The Michelin Master Series opens with Chef Thav Phouthavong of 80/20, Bangkok, on 31 October and 1 November 2025. Recently appointed Head Chef, Thav is redefining Thai cuisine with a style he describes as “fun, bold, and unpretentious.” Born in Belgium, raised in the UK, and shaped by his Laotian heritage, his culinary journey has spanned some of London’s finest kitchens, including Hibiscus and 50 Days by Albert Adrià, before returning to Southeast Asia. His dishes offer a fresh, contemporary perspective on Thai gastronomy, celebrating both local produce and cross-cultural creativity.


On 14 and 15 November 2025, the series continues with Chef Dan Bark of Cadence by Dan Bark, Bangkok. Born in Korea and raised in Chicago, Dan’s culinary journey bridges cultures and continents, shaped by over 18 years in acclaimed kitchens across the United States and Thailand. His formative years at Avenues (two Michelin Stars) and Grace (three Michelin Stars) in Chicago instilled in him a deep appreciation for discipline, creativity, and precision. In 2014, Dan moved to Bangkok to realise his vision of progressive American cuisine, opening a small restaurant above a craft beer bar that swiftly earned a Michelin Star in its first year. This evolved into Cadence by Dan Bark, his signature fine-dining restaurant where emotion and technique meet in harmony, retaining one Michelin Star since 2020.


The Chef’s Table journey continues on 21 and 22 November 2025 with Chef Allen Hyunmin Suh of Restaurant Allen, Seoul. After nearly two decades abroad honing his craft in Michelin-starred restaurants across the United States, including Eleven Madison Park under Daniel Humm, Allen returned to Korea to launch L’Impression, which achieved two Michelin Stars in its first year. His current project, Restaurant Allen, reflects his philosophy of blending global techniques with Korean sensibilities, delivering meticulous precision and a vision that has placed him among Asia’s leading innovators in contemporary fine dining.


Subsequent editions of the Michelin Master Series, running through February 2026, will welcome further Michelin-starred talents from Asia and beyond, each contributing their distinctive voice to the evolving culinary dialogue at Regent Bali Canggu. Every chapter will be an unmissable opportunity for discerning diners to experience the very best of Asia’s gastronomy—reimagined in Bali.
