Serving New Italian cuisine, the highly anticipated restaurant is set to inject fresh energy into Singapore’s restaurant scene

Chef Sergio Herman unveils his culinary universe at Le Pristine Singapore, where food, design, fashion, music and art intersect to create an immersive dining experience

Grand Hyatt Singapore and chef Sergio Herman are thrilled to announce the opening of Le Pristine Singapore on 8 October 2024, marking the debut of the celebrated Dutch chef in Southeast Asia.

Set in the space formerly occupied by the iconic mezza9, chef Sergio masterfully weaves food, fashion, art, music, and design, into an immersive experience poised to inject fresh energy into Singapore’s restaurant scene.

Diners can expect a 114-seater restaurant spread out over 650 square metres sectioned into two intimate and cosy dining areas, divided by the open kitchen and five uniquely designed private dining rooms for family and business gatherings, underscored by a casual fine dining approach.

Here, chef Sergio will be serving New Italian cuisine, a contemporary tribute to pure Italian flavours and Sergio’s deep-rooted Zeeland heritage.

When Zeeland, Italy and Singapore Meet Le Pristine Singapore’s cuisine is a contemporary tribute to pure Italian flavours and Sergio’s deep-rooted Zeeland heritage.

Located on the southwestern coast of the Netherlands, Zeeland is renowned for its pristine waters and exceptional seafood, a region that has profoundly influenced chef Sergio’s culinary journey.

The menu offers a showcase of signature dishes that embody the essence of New Italian cuisine, while also introducing local inflections inspired by Singapore’s vibrant culinary landscape.

Guests can expect a cuisine that resonates with deep, robust flavours and innovative combinations, designed to both comfort and surprise the palate. Both à la carte and tasting menus are available.

For starters, highlights include the Cannelloni Mussels, where tender Zeeland mussels are wrapped in delicate pasta, perfectly showcasing Chef Sergio’s skill in pairing the clean flavours of his homeland with the elegance of Italian cuisine.

Another standout, the Lobster Salad, combines the natural sweetness of fresh lobster with creamy stracchino cheese, cherries, and the richness of Vacche Rosse parmesan, all balanced by a cherry vinaigrette.

A must-try, the Le Pristine Signature Seafood Orecchiette, a signature at all Le Pristine locations, blends the deep, savoury notes of mussel, squid, and langoustine with housemade orecchiette and a rich nduja sauce — a perfect harmony of familiar and bold flavours. Meanwhile the Pizzette King Chilli Crab is a Le Pristine Singapore exclusive not to be missed.

Here, tender Alaskan king crab meat is paired with the bold, familiar taste of Singaporean chilli crab served atop a fluffy mini pizza base. Courgette lends a refreshing, light texture, while pistou, a sauce made with basil, garlic, and olive oil balances the richness.

For dessert, the Housemade à la minute Vanilla Ice Cream brings a playful twist on an all-time favourite. Made fresh to order, the vanilla ice cream is finished tableside with caramelised pistachios, hazelnuts, and chocolate sauce, evoking a joyful childhood memory.

“We want every guest to experience the energy, creativity, and thoughtfulness that goes into every dish — it’s about crafting a dining experience that lingers long after the last bite,” says chef Sergio.

“For me, it’s a celebration of life, culture, and connection through food, and we’re excited to share that with every diner who walks through our doors.”


A Creative Universe

Japanese design firm NAO Taniyama & Associates has transformed the former mezza9 space into a sleek, moody playground. The space features art by established Dutch artists, including Sabine Marcelis, Maarten Baas, and Rotganzen, strategically placed at key focal points.

Additionally, the associates are dressed in uniforms designed by the Danish-Italian firm OLDER.

Guests enter the restaurant by ascending a sweeping staircase, and entering a space decked out with warm interior hues and moody tones. Overhead, a playlist of classic hits from the likes of Grace Jones, David Bowie and Red Hot Chilli Peppers sets the tone for a party already in motion.

At the top of the stairs, a bar invites guests to linger with a cocktail while the striking wine tunnel beckons to the left — a dark, dramatic passage illuminated by red stripe lighting — enticing wine lovers to explore 150 hand-selected labels.

It leads to three of the five private rooms which can seat from six to 13 diners.

Choose from seating by the open kitchen where diners get to immerse themselves in the culinary action or banter with the team, or cosy up in one of the seats in the main dining area.
